Can’t get enough pumpkin spice? Try this recipe for yummy Pumpkin Spice Overnight Oats! It’s quick and easy to make and is a delicious, filling ready-made breakfast for the next morning!
Overnight Oats are one of the best things since sliced bread, in my opinion. They’re quick and easy, you can make them into your favorite version, and easily add/leave out whatever you prefer; you can totally make it your own.
I love overnight oats and my kids do too. In fact, my kids love to make their own creations and it was my son, Joshua, who suggested we make pumpkin overnight oats. Of course, you can’t really have pumpkin without pumpkin spice, so we added that too.
If you’re new to overnight oats, it may seem odd to not cook your oats, but they are delicious to eat the next day as the liquid softens the oats and the flavors blend together.

Pumpkin Spice Overnight Oats
½ cup almond milk (or your favorite milk – you can use regular, coconut, cashew, etc.)
½ cup oats (use gluten-free if needed)
¼ cup pumpkin puree
½ tsp cinnamon
⅛ tsp ginger
⅛ tsp cloves
¼ tsp vanilla extract (you can use imitation if needed – pure vanilla extract is outrageously expensive now!)
2-3 tsp maple syrup
1 Tbsp chopped walnuts or pecans, optional
Put the oats into a small mason jar…
Add the remaining ingredients, except for the nuts.
Stir to combine.
Place the nuts on top if desired. My kids do not like nuts in their pumpkin spice overnight oats, but I do. I like walnuts or pecans in this breakfast.
Cover and refrigerate overnight.
Serve and enjoy! Add a touch more of maple syrup if desired…

- pinch allspice
- ¼ tsp vanilla extract
- 2-3 tsp maple syrup
- 1 Tbsp chopped walnuts or pecans, optional
- Put all the ingredients except the nuts into a small mason jar and stir to combine. Place the nuts on top if desired. Cover and refrigerate overnight. Serve and enjoy the next morning! You may want to add another drizzle of maple syrup if desired, depending on how sweet you prefer.
