Coconut Banana Chia Seed Pudding

Ingredients

  • 1.5 cups coconut almond milk (or regular almond milk)
  • 2 large bananas, cut into chunks
  • 1/3 cup chia seeds
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 1/3 cup coconut flakes (unsweetened) + extra for garnish

Instructions

  1. Put all the ingredients (except for 1 banana and coconut flakes for garnish) into a blender and blend until smooth
  2. Add the remaining banana (cut into chunks) and pulse once or twice.
  3. Pour into a bowl or container and cover. Refrigerate for 2 hours or longer, until thickened.
