Graham Cracker Ice Cream Sandwiches

- 1 package (3.4 oz) instant vanilla pudding mix
or for gluten-free, use this. - 1 3/4 cups cold milk
- 1 container (8 oz) Cool Whip (not frozen)
- 1 cup mini chocolate chips
- 1 box of graham crackers (use gluten-free graham crackers if needed)

- Mix pudding and milk together, then refrigerate until set. In the meantime, break the graham crackers into squares. Once the pudding is set (usually 5-10 minutes), gently mix in the Cool Whip and mini chocolate chips.
- Put 24 graham crackers onto a baking sheet and top with 2-3 TB of pudding mixture. Put another graham cracker square on top. Freeze for 1 hour or until firm. Wrap individually in plastic wrap; freeze.
- Serve frozen.
