Italian Parmesan Chicken & Rice


  • Kraft Fresh Take Italian Parmesan
  • 11.5 lb chicken breast, cut into strips or small pieces
  • 1 can cream of chicken soup
  • 1 cup long-grain rice (I use Jasmine long-grain white rice)
  • 2 cups water
  • 16 oz bag frozen peas & carrots (thawed in the microwave first)
  • 1 tsp basil
  • 1 tsp onion powder


  1. Preheat the oven to 375°.
  2. Pour the rice into an 9x13x2″ungreased baking dish. Sprinkle the basil and onion powder on top.
  3. Next, pour the water on top and add the cream of chicken soup and gently stir everything together.
  4. Add the peas and carrots.
  5. Coat the chicken breast in Kraft Fresh Take and put on top of the rice mixture. Sprinkle remaining Kraft Fresh Take over the top of the dish.
  6. Bake, uncovered, for 35-45 minutes or until chicken is fully cooked.
  7. Serve warm. Enjoy!
