Pumpkin Oatmeal Cookies

With a light pumpkin flavor, Pumpkin Oatmeal Cookies are the perfect fall twist to a classic favorite cookie.

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 cup of pumpkin (not pumpkin pie filling)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 cups oatmeal (old fashioned is best)
  • 1/21 cup raisins

Instructions

  1. Heat the oven to 350°.
  2. Beat the softened butter until it’s creamed well. Add the sugars and mix.
  3. Add the pumpkin, eggs, and vanilla; beat.
  4. Combine the flour, baking soda and spices in a separate bowl; add to the pumpkin mixture and mix. Stir in the oatmeal, and lastly the raisins.
  5. Drop rounded teaspoonfuls onto cookie sheets and bake for 12-15 minutes.
  6. Cool completely on a wire rack.
