Pumpkin Oatmeal Cookies

- 1/2 cup butter, softened
- 1 cup brown sugar
- 1/2 cup sugar
- 1 cup of pumpkin (not pumpkin pie filling)
- 2 eggs
- 1 teaspoon vanilla
- 1.5 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 3 cups oatmeal (old fashioned is best)
- 1/2–1 cup raisins
- Heat the oven to 350°.
- Beat the softened butter until it’s creamed well. Add the sugars and mix.
- Add the pumpkin, eggs, and vanilla; beat.
- Combine the flour, baking soda and spices in a separate bowl; add to the pumpkin mixture and mix. Stir in the oatmeal, and lastly the raisins.
- Drop rounded teaspoonfuls onto cookie sheets and bake for 12-15 minutes.
- Cool completely on a wire rack.
