Soft and delicious, bursting with apple flavor and sweetened only with honey and banana, this Gluten-Free Apple Oatmeal Muffins recipe is kid-approved and easy-to-make!

Ingredients

  • 3 bananas
  • 2 Tbsp coconut oil
  • 1 egg
  • 2 cups (about 2) apples, peeled, cored, and chopped into small pieces
  • 1 tsp vanilla extract
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk
  • 2 cups gluten-free oats*
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup raisins

Instructions

  1. Heat the oven to 375 degrees.
  2. Whisk the bananas in a mixing bowl until mashed; add the coconut oil, egg, 2 cups of chopped apples, vanilla extract, honey, and almond milk and mix well.
  3. Add the dry ingredients – oats, almond flour, coconut flour, cinnamon, baking powder, baking soda, and sea salt, mixing until combined. Fold in the raisins.
  4. Spoon into 24 paper-lined muffin cups.
  5. Bake for 20-24 minutes or until a toothpick inserted comes out clean.

Notes

These muffins freeze nicely; just seal tightly in a ziploc bag.
