Rice Krispies Popsicle Treats

With hectic schedules, finding family time can be tough. It’s a good thing family time doesn’t have to be a fancy vacation or a day away. Just spending time together with something simple is all it takes. And often it’s those spontaneous simple moments that bring about the best memories.

One of our favorite family fun activities is cooking or baking together. I usually have one or two of the kids (all four is a bit daunting for this mom) help and together we have fun making delicious recipes for the whole family to enjoy. I also throw in a little learning as the kids help me measure ingredients. They’re having so much fun they don’t even realize it!

Rice Krispies Treats are one of our favorite recipes to make. The chewy crunchy treats are quick and simple and everyone loves them. There’s a reason why this classic treat has been a favorite for generations!

Another great thing about Rice Krispies Treats is that there are so many fun ways to make them. I love experimenting and making different varieties. Last year, I created a new recipe: Strawberry Rice Krispies Treats and later Lime Rice Krispies Treats.

More recently, I tried out a new Rice Krispies Treat creation. This one is based on a fun recipe on the Rice Krispies website – Rice Krispies Dipper Treats.

Rice Krispies Popsicle Treats

Shaped like a popsicle, Rice Krispies Popsicle Treats are dipped in chocolate and covered with sprinkles. Kids and adults love eating this twist on the classic Rice Krispies Treat recipe.

Rice Krispies Popsicle Treats

Rice Krispies Popsicle Treats are so easy to make, you’ll definitely want the kids to help. 

Rice Krispies Popsicle Treats

What You’ll Need:

  • 8 cups Rice Krispies cereal
  • 1 bag (10.5 oz) mini marshmallows
  • 1/2 cup butter or margarine
  • 1 tsp vanilla
  • 1.5 cups semi-sweet chocolate chips (3/4 bag)
  • 1.5 cups white chocolate chips (3/4 bag)
  • sprinkles
  • 18-24 popsicle sticks

Instructions:

Melt the butter in a large saucepan over low-medium heat. 

Add the bag of marshmallows and let it sit for about 30 seconds or so as it slowly melts. Stir gently.

Add the vanilla extract and stir gently again.

Once the marshmallows are partially melted, remove your pan from the heat. (The key to not-too-hard Rice Krispies Treats is not overheating the marshmallows.)

Stir until the marshmallows are melted completely and lumps are gone. You can use a whisk.

Add the Rice Krispies and stir gently until coated with the marshmallow mixture. 

Next grease a 13x9x2″ pan. Then grease your hands, like Emily.

This will keep the treats from sticking to your hands as you pat them down in the pan.

Let the Rice Krispies Treats cool down for 20-30 minutes. 

Next cut into 2 inch by 3 inch rectangles. Shape each piece into a popsicle. {The kids will love this step.}

Push a popsicle stick through the bottom of each treat. You may have to help little ones with this.

Lay the treats out on parchment or waxed-paper lined cookie sheets.

While your little helper is finishing shaping the popsicle treats, you can melt the chocolate.

Melt the semi-sweet chocolate chips in a small-medium saucepan over low-medium heat, stirring frequently. Add a tablespoon of vegetable oil (this helps the chocolate spread better.) Once the chocolate is almost melted, remove from the heat and continue stirring until smooth. 

Dip each popsicle treat into the chocolate, then return to the paper-lined cookie sheet to dry. {An adult or older child should dip the popsicles.}

Next, have your little helpers add sprinkles to the Rice Krispies Popsicle Treats.

Repeat the melting and dipping process for the white chocolate. (Use a different saucepan or clean your first saucepan once it’s cooled.)

Let the popsicle treats cool on the counter or for faster results, in the refrigerator.

I’m not sure which was more fun: making the treats with my little helpers or watching their happy faces as they enjoyed their yummy Rice Krispies Popsicle Treats!

All four kids said this is one of their favorite treats because it’s so fun to make, looks so fun, and is fun to eat! That’s a whole lotta fun wrapped up in one easy to make recipe!

This fun twist on the classic Rice Krispies Treat recipe adds chocolate, sprinkles, and a handy popsicle twist so there’s no sticky fingers

Ingredients

Scale
  • 8 cups Rice Krispies cereal
  • 1 bag (10.5 oz) mini marshmallows
  • 1/2 cup butter or margarine
  • 1 tsp vanilla
  • 1.5 cups semi-sweet chocolate chips (3/4 bag)
  • 1.5 cups white chocolate chips (3/4 bag)
  • sprinkles
  • 18–24 popsicle sticks

Instructions

  1. Melt the butter in a large saucepan over low-medium heat. Add the marshmallows and let it sit for about 30 seconds. Gently stir. Add the vanilla extract and gently stir again. Let the marshmallows partially melt but remove from heat before they are fully melted. Stir (off the burner) until they are completely melted. Add the Rice Krispies and gently mix.
  2. Dump into a 9×13″ greased pan and pat down gently with your hands (butter them first to prevent sticking.)
  3. Cool for approx 30 minutes, then cut into 2×3″ small rectangles. Shape into popsicles, then push a popsicle stick through the bottom of each treat. Place the treats on wax-paper or parchment paper lined cookie sheets.
  4. Melt the semi-sweet chocolate over low heat, stirring frequently, and add about 1 tablespoon of vegetable oil. Stir until smooth.
  5. Dip each popsicle treat into the chocolate, returning to the paper-lined cookie sheets to dry. Add sprinkles for decorations.
  6. Repeat steps for white chocolate.
  7. Cool completely before serving.

      These look delicious. I make Rice Krispies Treats all of the time but it never occurred to me to put a popsicle stick in them. Great way for little hands NOT to get so sticky!

      What a clever idea! Rice Krispie treats still one of our favorite cookies. But this is such a clever idea. Your helper did such a good job! This would be great at a birthday party. Just make the “pop-cycles” and then at the party–add the chocolate and let everyone decorate their own. I love to add miniature chocolate chips in the cookie recipe.
