Have you ever tried to make something, but it ended up being a complete disaster? That’s how I came up with these Chocolate Chip Coconut Bars. No, these coconut bars aren’t a disaster, but I did created this recipe completely by accident!
My first attempt was for a snack balls recipe for my kids. Since I have to make all their lunches and snacks for school almost entirely from scratch, I’m always looking for new recipes in an attempt to find more convenient, yet still healthy ways to feed them.
The snack balls wouldn’t roll into a ball and were an epic fail. But then it occurred to me that it’s more work to roll dough into individual balls anyways and wouldn’t bars just be easier all around?
After a few more tweaks, I now introduce you to one of my favorite snack recipes ever – Paleo Chocolate Chip Coconut Bars.
These Chocolate Chip Coconut Bars are usually meant as a school snack for my kids, but I think that’s happened maybe once. That’s because these coconut bars are so good, my whole family devours a batch in almost no time at all. This recipe is that good.
Chocolate Chip Coconut Bars are melt-in-your-mouth delicious. It’s a good thing this recipe takes just 5 minutes to whip up because these bars won’t last long!
Another reason I love this recipe is that the ingredients are so common, I always have them on hand, making it simple to whip up a batch anytime.
What You’ll Need for Chocolate Chip Coconut Bars:
- 1 cup almond butter (or peanut butter)
- 2/3 cup coconut oil, melted
- 1/4 cup honey
- 2 cups shredded coconut, unsweetened
- 2 tsp vanilla extract
- 2/3 cup chocolate chips
Mix everything but the chocolate chips together in a food processor or mixer.
Add the chocolate chips and stir or pulse briefly.
Pour/spoon onto a parchment paper covered cookie sheet and refrigerate for an hour or so until firm.
Cut into bars. I love using my stainless steel scraper/chopper because it makes such large clean cuts. This recipe will make 18-24 bars.
Store your Chocolate Chip Coconut Bars in the refrigerator. The coconut oil base will make them prone to melting at warmer temperatures.
Your whole family will love this treat that’s healthy enough to be an fun snack, yet tasty enough to serve as a healthier dessert too! And yes, this recipe is Paleo, grain-free, dairy-free, and soy-free too (assuming you use soy-free chocolate chips.)
I’ve served this to non-Paleo friends; they loved it and couldn’t believe it’s a “Paleo friendly” recipe!

Ingredients
- 2 cups shredded coconut
- 1 cup almond butter
- 2/3 cup coconut oil, melted
- 3 Tbsp maple syrup
- 2 tsp vanilla extract
- 3/4 cup chocolate chips
Instructions
- Mix everything together and smooth onto a parchment-paper lined cookie sheet.
- Chill for 1-2 hours and cut into bars.
- Store in the refrigerator
