This is a sponsored article, but all opinions are my own.
It’s not always an easy task to feed kids. They’re either super picky or eating everything in sight. All the while, we’re trying to make sure they eat a healthy, balanced diet. Doesn’t it feel like that sometimes?
That’s why I love it when I find a recipe or food idea that all my children love. Even better when it’s easy to make.
That’s where this Scrambled Eggs & Cheese Monster comes in. You’re going to LOVE this fun breakfast just as much as the kids will.
It’s super easy to make and, with a cheesy twist courtesy of Frigo Cheese Heads String Cheese, you’ve got a protein-packed breakfast that will keep the kids satisfied all morning long.
But I can’t take credit for today’s recipe. This inspiration came from Nathan, my 12 year old, and I think he came up with a pretty great idea.
While many recipes for kids involve complicated prep and fanciness, I don’t have the time or creativity for that. Seriously am I the only one? Hello, bento box lunches, people! I love the idea, but that just ain’t gonna happen in my house!
But this Scrambled Eggs & Cheese Monster for kids is literally as simple as making scrambled eggs with a bit of cheese and letting the kids decorate them with fruit. That’s it.
But I bet you wouldn’t have guessed it was THAT easy from looking at it!
Now we’re talking, right?
And you’ll feel great about giving your kids a healthy, delicious breakfast that’s something different than the usual cereal, boring eggs, oatmeal, etc.
Because that’s the other thing – kids doesn’t seem to mind the same old thing over and over. But today, we’re switching it up. Just a bit.
Just like my recipe for Grilled Cheese “Sushi” Rolls for Kids.
How to Make a Scrambled Eggs & Cheese Monster for Kids:
Ingredients:
- 2 eggs
- a dozen grapes, sliced into quarters
- 3 blueberries (optional cut in half)
- 1 banana, sliced
- 2 Frigo Cheese Heads String Cheese sticks
(Note: this makes 1 Scrambled Eggs & Cheese Monster)
Cut one Frigo Cheese Heads String Cheese stick into small pieces.
Tear the other Frigo Cheese Heads String Cheese stick into shredded pieces, like this:
Lay them around a plate like this – this will be the wispy Monster hair or arms. Or whatever your child wants. You can have the kids do this step.
Heat your skillet to medium heat and grease with a little butter. (Or however you normally non-stick your pan.)
Beat your eggs with a whisk and pour into the skillet. Add the Frigo Cheese Heads String Cheese pieces.
Stir frequently until the scrambled eggs are cooked and the cheese is partially melted. It’s okay if it’s still in chunks – the kids will love the bites of cheesiness as they dig into their scrambled eggs monsters!
Spoon onto the plate and over the shredded Frigo Cheese Heads String Cheese bits.
Here’s where you can bring out your creative side and help fashion some cute or crazy monsters.
I lined grape quarters along the circumference of the monster head, then added grape quarters for the mouth, and three banana slices with blueberries on top for the eyes.
See? EASY!
Or simply hand the scrambled egg plate and sliced fruit over to the kids and let them get creative.
Here’s the “monsters” my children made:
{My kids were so excited but they patiently let me snap a few photos first. Even Luke!}
And if you want a Scrambled Eggs & Cheese Monster for your own breakfast, (it’s really REALLY good), I promise I won’t tell. We’ll just say it’s to encourage the kids, okay?
