It’s not always easy to eat well during the busy summer months. When you’re packing for family vacation or running from the pool to a friend’s cookout, it can be hard to find time for grocery shopping, never mind planning and cooking healthy meals and snacks!

Luckily there’s some quick and easy options that can help us offer our families simple wholesome food without spending hours in the kitchen.

This Strawberry Banana Ice Cream recipe is one of my family’s favorites. It requires just 4 simple wholesome ingredients and only takes about 3 minutes to make! Now that’s a winning combination for any mom!

This deliciously fruity treat is tasty enough to be dessert but nutritious enough to be an afternoon snack. And it’s both kid and adult-approved! I love recipes that the whole family gives a thumbs up to, don’t you?

How to Make Strawberry Banana Ice Cream:

Ingredients:

  • 2 cups frozen organic strawberries
  • 2 bananas
  • 1 Tbsp Horizon Organic Milk (if dairy-free, you can use coconut or almond milk)
  • 1/2 tsp vanilla extract
  • Horizon Snack Grahams, optional as a topping
  • food processor

Add the frozen strawberries and 2 bananas to your food processor.

Add 1 Tablespoon Horizon Organic Milk and 1/2 teaspoon vanilla extract. 

If you’re dairy-free, you can use coconut or almond milk.

Put the cover on and process for a few seconds. Your food processor might bounce around a little because frozen strawberries are tough to break apart; that’s okay. Just hang on!

This needs a little more processing:

Process until the strawberries and bananas are blended and creamy.

Scrape down the sides and process once more to get any remaining chunks.

Ingredients

Scale
  • 2 cups frozen organic strawberries
  • 2 bananas
  • 1 Tbsp milk (if dairy-free, use coconut or almond milk)
  • 1/2 tsp vanilla extract
  • Horizon Snack Grahams, optional as a topping

Instructions

  1. Add the strawberries, bananas, milk, and vanilla extract to a food processor.
  2. Process until everything is smooth and creamy. Scrape the sides; process again.
  3. Spoon into 2-4 bowls.
  4. Top with Horizon Snack Grahams as a fun treat for kids!
  5. Serve immediately.
