Overnight Oats are one of the best things since sliced bread, in my opinion. They’re quick and easy, you can make them into your favorite version, and easily add/leave out whatever you prefer; you can totally make it your own.
I love overnight oats and my kids do too. In fact, my kids love to make their own creations and it was my son, Joshua, who suggested we make pumpkin overnight oats. Of course, you can’t really have pumpkin without pumpkin spice, so we added that too.
If you’re new to overnight oats, it may seem odd to not cook your oats, but they are delicious to eat the next day as the liquid softens the oats and the flavors blend together.

Pumpkin Spice Overnight Oats
You’ll need almond milk, oats, pumpkin puree, pumpkin spices (like cinnamon, ginger, cloves, allspice), vanilla extract, maple syrup, and (optional) chopped walnuts or pecans.
Put the oats into a small mason jar…
Add the remaining ingredients, except for the nuts.
Stir to combine.
If you’re using nuts, sprinkle them on top.
My kids do not like nuts in their pumpkin spice overnight oats, but I do.
Cover and refrigerate overnight.

This no-cook Overnight Oats Pumpkin Spice recipe is delicious, gluten-free, dairy-free, plus it’s fast & easy to make the night before!
