I love creating new recipes and fun food for my kids to enjoy. Even though they may not mind eating a peanut butter sandwich every day for months, I like them to have some variety. You know?
Grilled cheese is always a favorite with kids and as I was making a sandwich about a month ago, I had an idea. What if I made Grilled Cheese “Sushi” Rolls?
Sushi is one of my favorite foods and my children know how much I love it, so I knew they would get a kick out of having their very own sushi rolls, just with kids friendly ingredients.
I decided to make our Grilled Cheese “Sushi” Rolls even better than I originally planned. Instead of slices of cheese, we use cheese sticks, so there’s even more cheesy goodness. Trust me, it tastes amazing.
I highly recommend using Frigo Cheese Heads String Cheese because it’s so tasty and affordable. {That’s a winning combination for any mom!}
Frigo String Cheese is a staple in our home. I love knowing there’s calcium and protein, so my kids will stay satisfied longer. Plus, because they’re such great on-the-go individually wrapped snacks with no mess (aside from the occasional child not throwing their wrapper away), we can take them everywhere. My kids each take one to school every day for lunch or snack.
And I love how easy it is too!
I have a hard time keeping enough Frigo String Cheese in my house because my kids love it so much, it’s one of the first snacks they reach for!

Grilled Cheese “Sushi” Rolls are a delightful cheesy twist on the classic sandwich that both kids and adults love. {I even have a hard time saying no to these tasty grilled cheese bites!} They’re fairly simple to make and are great for lunch or snack or even a simple dinner – the kids won’t mind!
Ingredients:
- 8 slices of bread
- 6-8 Frigo Cheese Heads String Cheese
- butter
- fruit, optional
Trim the crust off the bread. This makes your “sushi” prettier, but it’s completely optional as it’ll still taste great if you do leave the crust. I usually leave it on since I don’t like to waste food. Totally up to you and your kids.
Cut a Frigo String Cheese to fit the slice of bread. (Save the piece for more rolls later.)
Coat the edges of the bread with butter (this helps it stick together) and roll up the cheese stick and bread together.
Cut into 3-4 pieces.
Fry in your pan or griddle. (I use a griddle since I have four kids and I need to make lots of grilled cheese sushi bites quickly!)
Turn the grilled cheese bites every minute or so (depending on how hot your pan is) to cook each side evenly.
Note: If you have a stubborn piece that wants to unroll, hold it down on the pan for a few seconds until the heat helps cook the pieces together. You can also rub some butter on as this helps it cook faster.
Keep your pan or griddle well buttered so your grilled cheese will brown nicely. Mmm…

Serve your Grilled Cheese “Sushi” Bites when warm. Be prepared to warn little fingers that they might get burned if they’re too impatient to wait until their treat is cooler!
I love to serve Grilled Cheese “Sushi” Bites with fresh fruit – grapes, blueberries, strawberries, watermelon, etc. You can’t go wrong with fresh fruit and deliciously crispy cheesy bites!
Be prepared for your children to gobble up their Grilled Cheese Bites quickly and beg for more!
I usually give each child 6-8 pieces each (my oldest Nathan is 12 and he eats even more – my boys are going to eat us out of house and home!)

Instructions
- Trim the crust off each slice of bread (optional.)
- Roll one cheese stick into each slice of bread (cut off one end of cheese if it’s too long and save for another roll.)
- Coat the edges of the bread with butter and roll up the cheese stick and bread together.
- Cook for about 5 minutes, rolling periodically to brown each side.
- Serve warm with fresh fruit.
