Now that Thanksgiving is over, what do you do with all that leftover turkey? Sure you can continue to enjoy full plates of all the feast leftovers, but that gets old eventually.

I’ve got a delicious recipe for you today that’s a great way to use up leftover turkey. This Leftover Turkey Sandwich is sweet, savory, and tastes just like a turkey dinner.

And I daresay, it’s about as good as Ross’s leftover turkey sandwich from Friends. Remember that episode? “MY SANDWICH? YOU ATE MY SANDWICH?!” When poor Ross was having anger management issues and his boss ate the much-looked-forward-to turkey sandwich Monica made him?

Sorry, off topic.

Anyways, this sandwich rivals Ross’s legendary sandwich. It’s that good.

So this recipe isn’t gluten free, but my friend, Joanne, created this recipe, took these beautiful photos, and she assures me that this is one tasty turkey leftover idea. And Joanne is an amazing cook, so believe me when I say, it’s GOOD!

Leftover Turkey Lunch:

Ingredients:
¼ cup onion, chopped
1 Tbsp. butter
1 C turkey, cooked & diced
2 Tbsp cranberry sauce
2 tsp butter
1/3 c turkey gravy, heated
2 slices bread
salt and pepper, to taste

Step 1: Chop up 1/4 cup onion. Mix with 1 tablespoon of butter in a skillet. Saute until translucent.

Step 2: Add 1 cup of diced turkey to the skillet with the onion and season with salt and pepper. You’re pretty much just warming it up here, because it should already be cooked through.

Step 3: Toast 2 pieces of bread, then spread with a small amount of butter and about 2 tablespoons of cranberry sauce.

Ingredients

Scale
  • ¼ cup onion, chopped
  • 1 Tbsp. butter
  • 1 C turkey, cooked & diced
  • 2 Tbsp cranberry sauce
  • 2 tsp butter
  • 1/3 c turkey gravy, heated
  • 2 slices bread

Instructions

  1. Combine diced onion and butter in a fry pan. Sauté to translucent.
  2. Add turkey to fry pan with the onion, and season with salt and pepper
  3. Toast the bread, then spread with butter and cranberry sauce
  4. Top bread with sautéed turkey. Drizzle the hot gravy evenly over both slices.

      I love love love adding Cranberry Sauce to a leftover turkey sandwich. I had never thought of doing it before until I had them at a sandwich shop in Vegas of all places, but it is soooo good. This looks delicious. I think it’s lunch time.
