It can be a lot of work to consistently cook healthy meals for your family.
I have to cook gluten-free, dairy-free since we’re on a restricted diet and while it’s worth it because we’re all healthier, there are days I wish we could just order a pizza again! So lately, I’ve been on a mission to find family dinners that are quick and easy for busy weeknights, but still healthy.
That’s how I came up with this Easy Tuna Patties recipe. I probably made about 6 different varieties before I settled on this recipe and my whole family loves this easy meal! Especially me, because it literally takes 10 minutes to prepare, than another 20 minutes in the oven and dinner is done!
These Easy Tuna Patties are a perfect busy weeknight family dinner. With just a few simple ingredients, they’re so good even kids love them! And I know they’re good when all the kids ask for seconds and even beg to pack leftovers for lunch the next day!
Plus, these Easy Tuna Patties are clean-eating with no gluten, dairy, grain (Paleo-friendly.)
The secret to this delicious recipe? Canned food! Cans are a great way to save time and get a healthy meal on the table fast. They’re also less expensive than fresh or even frozen produce. In fact, canned food can be half the cost of frozen food and 15-20% less than fresh. Um, yes please!
I don’t know about you, but I can use all the help I can get when it comes to buying healthy food for my family. Eating healthy can be expensive, but smart choices like canned food make it more affordable.
Your local Albertsons store is a great place to find canned goods. We have Shaw’s supermarkets here in the New England area and they have canned foods on sale every single week. I love knowing I can find exactly what I need there!
Back to our delicious Tuna Patties…
Here’s what you’ll need to make Easy Tuna Patties:
- 4 cans chunk-light tuna fish in water
- 1 Tbsp coconut flour
- 3/4 tsp salt
- 1/4 tsp chipotle powder
- 1/4 tsp pepper
- 1/.4 cup tomato paste
- 1/4 cup red onion, finely chopped*
- 2-3 garlic cloves
- 1 egg
*My kids aren’t big fans of onion so I keep it minimal, but you can add more to your taste. Tip: chop the whole onion at once, then store the extra in your freezer until you need it again!
Preheat your oven to 450 degrees.
Drain the water from the cans of tuna and scoop into a medium sized bowl. This recipe is so simple, you don’t even need a mixer!
Add the dry ingredients – the coconut flour, salt, pepper, and chipotle power (the chipotle powder really makes this recipe amazing) and stir.
Add the remaining ingredients – tomato paste, onion, garlic, and egg…
…and mix well.
Shape into 6 tuna patties and place on a parchment paper-lined baking sheet. It was one of those days when I took the photos for this recipe and I completely spaced and used aluminum foil. Don’t do that. The tuna patties love to stick to foil, but parchment paper works perfectly!
When you shape the patties, make sure you press them down – like hamburger patties. If they’re too thick, they’ll take longer to cook.
Bake for 20-25 minutes. Allow to cool for 5 minutes before serving.
You can serve your Easy Tuna Patties over lettuce. We love adding fresh tomato slices, avocado, and sometimes a little parsley as a garnish.
My kids eat their patties with mustard and ketchup. What can I say? They don’t fully appreciate the smokey chipotle flavor all by itself.
Of course if you’re not gluten-free, you could pop these into a bun too.
