I adore just about anything with pumpkin in it. Pumpkin is just so good and there are so many amazing ways to use it! One of our favorite family pumpkin recipes is Pumpkin Oatmeal Cookies. This recipe is so easy to make, even the kids can help make it! Emily loves to help me make these delicious cookies and now she’s so good at it, she can almost make them all by herself!
With a light pumpkin flavor, Pumpkin Oatmeal Cookies are the perfect autumn twist to a favorite classic. They’re great for an afternoon snack for the kids. Or as an afternoon dinner treat. Or to take on-the-go. The whole family will love them!
Forget just autumn. These pumpkin oatmeal cookies are so dang good, you’ll want to make them year round! (I do!)
Pumpkin Oatmeal Cookies:
What You’ll Need:
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1/2 cup sugar
- 1 cup of pumpkin (not pumpkin pie filling)
- 2 eggs
- 1 teaspoon vanilla
- 1.5 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 3 cups oatmeal (old fashioned is best)
- 1/2-1 cup raisins
Heat the oven to 350°. Beat the softened butter in your mixer until creamed well. Add the sugars and mix well.
Add the pumpkin, eggs, and vanilla; beat.
Combine the flour, baking soda and spices
Add to the pumpkin mixture and mix. Stir in the oatmeal…
…and raisins. My kids had raided the raisin bin again so I only had 1/2 cup this time. Though I usually like to add a full cup because we love raisins in our cookies.
You can also use dried cranberries if you want to change it up even more.
Drop rounded teaspoonfuls onto cookie sheets…
…and bake for 12-15 minutes. Serve warm with a glass of cold milk. Or however you and your family love to enjoy cookies.
Just one thing: it’s hard to eat just one!

Instructions

- Combine the flour, baking soda and spices in a separate bowl; add to the pumpkin mixture and mix. Stir in the oatmeal, and lastly the raisins.
- Drop rounded teaspoonfuls onto cookie sheets and bake for 12-15 minutes.
- Cool completely on a wire rack.

I think this is probably a better recipe than the pumpkin cookies I have tried before. They always come out too wet but the oatmeal would help I bet. They look tasty!

About 112 calories per cookie if you make 36 cookies per batch. If your cookies are smaller, they will be less. I’m glad you enjoyed them!
