These Blueberry Energy Bites need just 5 simple ingredients and 10 minutes to whip up. With dried blueberries and coconut oil, these no-bake energy bites are a protein-packed, high-fat satisfying snack that’s naturally low in sugar and so tasty!
No-Bake Energy Bites
In my house, we love no-bake energy bites. Sometimes we call them snack balls or energy balls. Whatever you call them, we make them often because they’re easy-to-make snacks that everyone loves!
Our Blueberry Energy Bites are naturally gluten-free and dairy-free. Technically they’re considered vegan too.
The Perfect School-Day Snack
These no-bake energy bites have been a game-changer for us, particularly during the school week.
I’ll take 10 minutes to whip up a batch or two of these blueberry energy balls and store them in the refrigerator. This way, my kids can easily grab a couple as they pack their school lunches each week. They have also come in handy when any of us are hungry in between meals, or just want a bit of a pick-me-up too.
Kid-Friendly “Cooking”
This energy bites recipe is easy enough that my 8-year-old son can make a batch all by himself! He loves helping in the kitchen, and this recipe allows him to actually make something on his own from start to finish. I do recommend supervising when the food processor is in use, but other than that, these no-bake energy bites are a great recipe for kids to make.
Even young children will enjoy dumping in ingredients and stirring in the dried blueberries. And everyone will love being the recipe taster, of course!
How to Make Blueberry No-Bake Energy Bites
This recipe is so simple to put together—it’ll take about ten minutes, give or take to put together. I like to make a double or even triple batch and keep extras in the freezer. Whenever I’m ready to enjoy, I just pull a few out of the freezer and let them come to room temp, which takes about ten minutes. Easy peasy!
Blueberry Energy Bites Ingredients
To make these no-bake energy bites, you only need a few simple staples.
- oats – high in antioxidants and fiber, oatmeal supplies a tiny bit of carbs for energy in each bite. If you are gluten-free, make sure to find oats that are labeled as such.
- sun butter – if you haven’t tried it before, you’re in for a treat! Sun butter is made from roasted sunflowers. This is a great alternative if you have peanut allergies or sensitivities in your home. If you don’t have this on hand, you can sub for any other type of nut butter, but I encourage you to give this a try!
- honey – if you want to make this vegan, you can substitute the honey for agave or even maple syrup.
- coconut oil – coconut oil is a healthy fat source that will keep you full and energized. It also adds a subtle coconut flavor that goes perfectly with the blueberries!
- dried blueberries – fresh blueberries won’t really work here. Whenever you are choosing your dried berries, look for a variety that doesn’t have added sugar. With the honey added into these no-bake energy bites, you won’t need it! If you are unable to find dried blueberries, any other type of dried fruit will work.
How to Make Blueberry Energy Bites Step by Step
For this recipe, you will definitely want to pull out your food processor. You can also use a mixer for this recipe. I prefer the food processor because it whips up these snack balls in SECONDS, but a mixer works well too.
Mix or process the oats, sun butter, honey, and coconut oil together.
Next, stir in the dried blueberries.
Then roll your energy bites into small balls.
That’s it! This recipe makes about 18-24 blueberry energy bites, depending on how much your helpers “taste-test” and the size of your snack balls.
How to Store Energy Bites
Once you have made your energy bites, they will need to be kept cool. If you plan to eat them within 7 days, keep the in the refrigerator in an airtight container or ziploc bag. They will stay good for about a week.
You can also store the blueberry energy balls in the freezer in an airtight container. When you are ready to enjoy one, pull it out of the freezer and let it sit out for 10 minutes or so before enjoying.
