Amish Country Casserole {Easy Beef Noodle Casserole}

If you’re looking for a hearty, comforting meal that the whole family will love, Amish Country casserole is the perfect recipe to add to your weeknight rotation. Made with tender noodles, flavorful beef and sausage, and a creamy sauce, this dish is a crowd-pleaser that’s as easy to make as it is delicious.

With just 20 minutes of prep time, it’s ideal for those busy evenings when you want a homemade dinner without spending hours in the kitchen. This kid-friendly casserole will quickly become a favorite at your table!

Ingredients

Here’s what you’ll need to have on hand to whip up the Amish country casserole. As you can see, all of these are easy to find at your local grocery store—or you may have them in your pantry already!

  • Ground beef – you can also use whatever ground meat you have available, such as turkey or chicken.
  • Ground sweet sausage – my family prefers it with sweet sausage, but use spicy sausage for a kick.
  • Diced onion
  • Minced garlic
  • Salt
  • Black pepper
  • Egg noodles – you can also use gluten-free egg noodles or penne noodles
  • Marinara sauce –  I always use and recommend Rao’s. I’ve tried other brands for this and other marinara sauce recipes like my baked ziti and cheesy penne casserole, but Rao’s is so superior it’s worth spending the extra money. Plus, there’s less sugar than most other marinaras. 
  • Cream of chicken soup – if you are making this gluten-free, make sure you use gluten free cream of chicken
  • Shredded cheddar cheese
  • French fried onion rings

How to Make Amish Country Casserole

First, preheat the oven to 350 degrees. Meanwhile, cook the noodles according to package directions for al dente noodles, then drain.

While the noodles are cooking, brown the ground beef and sausage along with the diced onion.

Next, add in the minced garlic and cook for 1 minute. Then stir in the salt, pepper, cream of chicken soup, and marinara sauce.

Note: You can add more or less salt and pepper to taste. Adjust as you desire.

Now grab those cooked noodles and add them to the meat mixture, along with some of the shredded cheese.

Once the noodles and meat are combined, transfer everything to a 2-quart casserole dish and spread it out evenly. Then, sprinkle with the remaining shredded cheese and French-fried onion rings on top.

Bake at 350 for 15-20 min or until the cheese is melted. Once you pull it out of the oven, it’ll need to sit for about 5 minutes before you all dig in and enjoy!

Storing & Reheating

To Refrigerate:

If you have leftovers, you can store them in an airtight container in the fridge for as long as 3 days. To reheat, you can just put a portion in a microwave (or oven) safe dish and microwave for 1-2 minutes, or heat it in the oven at 350°F for about 10 minutes.

To Freeze:

Have more leftovers than you thought? Amish Country Casserole freezes beautifully.

After assembling the casserole, cover it tightly with aluminum foil before baking and freeze for up to 3 months. When ready to eat, thaw it overnight in the fridge and bake as directed, or just stick it in the microwave.

FAQs

Can I make this casserole ahead of time?

Absolutely! Assemble the casserole earlier in the day and refrigerate it until dinnertime. When you’re ready to eat, simply bake it as directed.

Is this a good meal prep option?

Absolutely! In fact, I almost always double the recipe to have an extra to pop in the freezer for another day, then note it in my meal planning calendar.

If you’re doing this, simply follow the steps to assemble the casserole, but don’t bake it. Cover tightly with foil and freeze for up to 3 months.

I’d also recommend making sure the pasta is al dente, so it stays nice and intact instead of becoming mushy.

Can I substitute the ground beef and sausage with other meats?

You can use any combination of ground beef, ground turkey, chicken, etc. Use whatever you prefer or is on sale at the grocery store!

While you can leave out the ground sausage, I don’t recommend it. It really does add an extra bit of flavor! You can play around with your favorite sausage, however. Try hot and spicy if your family prefers, or stick with sweet Italian.

How do I make it gluten-free?

You can easily make this gluten-free by swapping out the egg noodles for gluten-free noodles. I often do this myself.

You’ll also want to make sure you find a gluten-free cream of chicken soup (there are several options available) and either skip the French-fried onion rings or find the elusive gluten-free version. (I can never find them myself, but you may have better luck!).

  • 1 pound ground beef, or turkey
  • 1/2 lb ground sweet sausage
  • 1/2 diced onion
  • 1 Tbsp minced garlic
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper
  • 1 (12 oz) egg noodles, or gluten-free elbow or penne noodles
  • 1 (24 oz) jar marinara sauce
  • 1 10.5oz can cream of chicken soup
  • 2 cups shredded cheddar cheese
  • french fried onion rings

Instructions

  1. Preheat the oven to 350 degrees. Cook the noodles according to package directions; drain.
  2. While the noodles are cooking, brown the ground beef and sausage along the diced onion. Add the minced garlic and cook for 1 minute. Stir in the salt, pepper, cream of chicken soup, and marinara sauce. Stir in the cooked, drained noodles. Mix in 1.5 cups shredded cheese. 
  3. Transfer to a 2 quart casserole dish. Sprinkle with the remaining 1/2 cup shredded cheese and french fried onion rings.
  4. Bake at 350 for 15- 20 min or until the cheese is melted. Let sit for 5 minutes and enjoy.
