ur summer is made up of days at the beautiful lakeside beach near us, hiking, yard sales, projects around the house, cookouts with family and friends, and more. All with a more laid back schedule compared to the rest of the year. {You can insert your own summer activities here.}
But summer is still quite busy. And even if I’ve spent the day at the beach with the kids, running constant head counts and chasing down wandering youngsters relaxing, it doesn’t mean I want to come home at 5 pm and spend an hour in the kitchen cooking.
So I have a list of quick and easy recipes that I rely on during the summer months. As always, my slow cooker is my friend. Of course the same ol’ slow cooker meals I’ve made all winter won’t work – we want something summer flavored.
Slow Cooker Barbecue Chicken is the perfect quick and easy recipe for the hot summer months. With three simple ingredients, it doesn’t get much easier than this.
I prefer KC Masterpiece Barbecue Sauce for this recipe. It’s sweet tangy flavor provides the perfect summer taste for the meal.
Slow Cooker Barbecue Chicken is a family favorite. It takes less than 5 minutes to throw in the slow cooker in the morning and another 5 minutes to prepare that evening.
All you need is 2 pounds of chicken breast, a bottle of KC Masterpiece Barbecue sauce, and hamburger buns (or Kaiser rolls or other bulkie roll type bread.)
Drop the chicken breast into your slow cooker and add 3/4 of the bottle of KC Masterpiece on top. Put the lid on and set your slow cooker for about 8 hours of low cook time. If you forget first thing in the morning, you can even put it together at noon and crank the slow cooker to high for 4-6 hours. You can even use frozen chicken breast if you forget to defrost. When you’re ready for dinner, take out the chicken, leaving the sauce behind (it will be thinner than earlier as the chicken juices have mixed), and shred. I use my stand mixer to shred the chicken; it takes 30 seconds. Add about a cup or so of the barbecue sauce mixture for more flavor and moisture, more or less as desired.
Spoon onto buns and top with additional KC Masterpiece Barbecue sauce as desired. You can also add a slice of cheese (we love provolone.)

We’re putting our house on the market soon and we’ve been doing projects around the house non-stop for the past couple weeks. To say we’ve been busy is an understatement. Slow Cooker Barbecue Chicken was the perfect meal for us this weekend, complete with my slow cooker on the counter amidst the paint cans. Everyone loved it, especially Nate.
