Eating healthier doesn’t mean you can’t enjoy a treat from time to time, especially when the treat itself is pretty healthy. With no refined sugar, soy, or dairy, this Easy Homemade Paleo Dark Chocolate recipe is delicious and a perfect way to enjoy a “healthy” dessert without feeling deprived.
This recipe is so simple to make; it only takes about 5 minutes to prepare and an hour or two to chill. And with just 4 simple ingredients, this Paleo Dark Chocolate is ideal if you’re avoiding processed foods.
I love chocolate, especially dark chocolate, because it’s satisfying with far less sugar. But since I’ve been eating Paleo for the past few months, I haven’t been able to find a good dark chocolate in the store. Even the “healthy” versions have some form of soy or dairy, both things I can’t eat. And besides that, organic dark chocolate is wicked (as we say here in New England) expensive!
That’s why I started experimenting with my own recipe a couple months ago. I wanted something that was easy to make and inexpensive. And that’s how I came up with this Homemade Paleo Dark Chocolate recipe.
This recipe is exactly what I wanted. It’s not fancy, but it’s easy to make, far less expensive than buying organic chocolate from the store, and satisfies a chocolate craving. And you probably already have the 4 simple ingredients in your kitchen!
One batch of this chocolate makes about the equivalent of 3 bars of regular dark chocolate. Not too shabby for 4 ingredients!
What You’ll Need for Homemade Paleo Dark Chocolate:
Melt the coconut oil in a saucepan over low heat. I usually melt it first, then measure, because that’s easier than trying to force the hardened coconut oil into a measuring cup. (Any extra oil is poured back into the container where it hardens again.)
Add the remaining ingredients and whisk and mix until any lumps from the cacao are dissolved.
Your dark chocolate should look like this.
Line a baking sheet with parchment paper, then pour the chocolate on the paper.
Smooth out to about 1/4″ thick and refrigerate for 1-2 hours. It will be easier to cleanly cut if you refrigerate longer, but if you can’t wait, an hour should be enough.
Store in a sealed container in the refrigerator or a cool dry place.
It’s so cold this time of year, I store my dark chocolate in a cupboard, but in the warmer months, refrigeration is a must because the coconut-oil-based chocolate will melt if warmed.

- ½ cup coconut oil
- ⅔ cup raw cacao powder
- 3-4 Tbsp maple syrup, more or less to your taste
- ½ Tbsp vanilla extract
- Melt the coconut oil over low heat.
- While the coconut oil is melting, line a baking sheet with parchment paper; set aside.
- Add the cacao, maple syrup, and vanilla extract to the coconut oil and stir well, whisking to remove any lumps from the cacao. Remove from the heat and pour onto the parchment paper-lined baking sheet. Smooth to about ¼" thick, then refrigerate until quite firm (1-2 hours.)
- Cut into 2" bars.
