I love me some chocolate. I know not everyone shares that sentiment, but there’s just something about a good piece of dark chocolate that brings me to my happy place.
Unfortunately most chocolate bars are loaded with sugar and other things, including soy, which isn’t good for us. {Read more about soy here.} Even my old favorite non-GMO fair trade dark chocolate bar from the grocery store had soy. And if you’re on a dairy free diet or Paleo, like me, that alone rules out most chocolate bars.
Luckily there’s a homemade version. I started experimenting and came up with this Chocolate Crunch Energy Bar recipe that’s Paleo friendly and it tastes amazing!
You’re going to love how delicious this healthy chocolate bar is! With coconut oil, cacao powder, chia seeds, and raw honey as a sweetener, this is a snack (or dessert or anytime treat) that you can enjoy guilt-free.
Plus this recipe is super easy to make!
When I say these chocolate bars give you energy, I mean it. Don’t eat these chocolate crunch bars in the evening or you may find yourself unable to fall asleep later. (Yep, been there, done that! I figured just one little bar wouldn’t hurt after dinner and I couldn’t fall asleep until midnight!) Of course I’m very sensitive, but still: consider yourself warned.
But that’s why these Chocolate Energy Bars are so awesome – instead of a cup of coffee mid afternoon, try a piece of this chocolate. It really provides a natural boost of energy with none of the caffeine jitters you find with coffee or other forms of caffeine.

Ingredients for Paleo Chocolate Crunch Energy Bars

- 1/3 cup coconut oil
- 1/2 cup cacao power < this is my favorite brand
- 1/3 cup honey – preferably raw which has more health benefits – if you can’t find local raw honey, this is the brand I recommend
- 1/2 cup chia seeds
- 1 cup unsweetened shredded coconut
- 1 tablespoon vanilla extract
- a few drops of stevia, optional (only if you need a little more sweet)

My kids prefer these energy bars to be sweetened a little more than I do, so I usually make up a separate batch for them with a little more honey and few extra drops of stevia extract.
Not that kids need extra energy of course! But I love that this is a healthy treat for the kids and us adults.
Confession: I’m practically drooling as I write this post because I’m not allowed to eat these chocolate energy bars right now, due to my strict detox diet. I can’t wait until my body is healed enough to enjoy healthy chocolate from time to time!
That’s a good reminder for all of us; yes, this chocolate energy bar recipe is what I consider to be “guilt free,” but that doesn’t mean we should eat the whole container in one sitting. Enjoy one or two small pieces and savor the goodness. Your body will thank you for making good choices!
Paleo Chocolate Crunch Energy Bars
These deliciously crunchy Paleo Chocolate Crunch Energy Bars provide an amazing energy boost!

Ingredients
- 1/3 cup coconut oil
- 1/3 cup honey – preferably raw which has more health benefits
- 1/2 cup cacao power
- 1/2 cup chia seeds
- 1 cup unsweetened shredded coconut
- 1 tablespoon vanilla extract
- a few drops of stevia tincture, optional (only if you need a little more sweet)
Instructions
- Melt the coconut oil and honey together in a small sauce pan. Stir in the cacao powder until mixed in well. Next stir in the chia seeds and shredded coconut. Add the vanilla extract and stevia (optional) and stir.
- Line a 9×13″ pan with parchment paper or foil. Pour the mixture into the pan and smooth out. You should have just enough chocolate mixture to barely cover the bottom of the pan. This is fine – if it’s too thick, it’s very hard to cut later.
- Refrigerate for about an hour or until hardened. Cut and enjoy.
- Store extras in the refrigerator – the coconut oil will cause it to melt if left out in a warm room.

It really is. 🙁 We just found out my kids all have soy sensitivities. Between that and corn sensitivity too, we literally cannot eat any processed snacks from the store. I’m staying busy making homemade snacks and lunches for them now.
