Today I have a delicious recipe for Berries ‘n Cream Popsicles that your whole family will love.

These Berries ‘n Cream Popsicles are lightly sweetened, with just a hint of maple syrup, and have a perfect combination of tart berry sweetness and smooth cream.

There’s no refined sugar in this recipe and you can make it dairy-free if you need to, like my family. My kids’ favorite version is with cashew milk – they just love these Berries ‘n Cream Popsicles. (And so do I!)

How to Make Berries ‘n Cream Popsicles

What you’ll need:

  • 1 cup milk – almond milk, cashew milk, coconut milk, or regular milk (or any combination)
  • ¼ cup maple syrup
  • 1 -1.5 cups frozen mixed berries, thawed
  • popsicle mold
  • popsicle sticks

Place the milk and maple syrup into a blender and blend well.

Add the thawed berries, and blend until it’s smooth.

Pour into your popsicle molds. I used four large popsicle molds.

You can use the cover that comes with your popsicle mold or do it this way; whichever way you prefer is fine.

Freeze your berries ‘n cream popsicles until they’re hard.

When you’re ready to serve your popsicles, let them sit about 5 minutes at room temperature or run them under warm water for about 30 seconds to help as you remove them from the popsicle mold. Don’t remove them until you’re ready to eat – or give them to your kids – unless you plan on freezing them in ziploc baggies.

These Berries ‘n Cream Popsicles are lightly sweetened, with just a hint of maple syrup, and have a perfect combination of tart berry sweetness and smooth creaminess.

Ingredients

Scale
  • 1 cup milk – almond milk, cashew milk, coconut milk, or regular milk (or any combination)
  • ¼ cup maple syrup
  • 1 –1.5 cups frozen mixed berries, thawed
  • popsicle mold
  • popsicle sticks

Instructions

  1. Place the milk and syrup into a blender; blend well.
  2. Add the thawed berries, and blend until it’s smooth.
  3. Optional: place another half cup of berries into the blender mixture AFTER you’ve blended everything to add more berry texture to the popsicle.
  4. Pour evenly into 4-6 popsicle molds. Cover with foil, and place small holes with the tip of a knife over the center of each popsicle receptacle. Carefully shimmy the wooden popsicle sticks ¾ of the way into the popsicles.
  5. Freeze until hard.
  6. When serving, let the popsicles sit for about 5 minutes at room temperature or run them under warm water for 30 seconds to ease the removal of the popsicle from the mold.

      For me there is nothing more cooling on a hot summer day than a nice creamy Popsicle. I am sure the combination for the cream and the berries is delicious, I will have to make this for the myself!
