Chunky Monkey Bites

Craving a sweet treat that’s both satisfying and secretly healthy? These frozen banana bites are the perfect no-bake snack—packed with banana, peanut butter, and chocolatey goodness in every bite. They’re naturally sweet, totally addictive, and easy enough for kids to help make!

Sometimes simple is best, and that’s where these frozen banana bites (which we call chunky monkey bites!) are so amazing. My kids adore this fun treat with bananas, peanut butter, and chocolate. And who wouldn’t?

In this post, I’ll show you exactly how to whip up a batch of your own to enjoy!

The only downside? Chunky monkey bites disappear quickly! But that’s okay, because they don’t store well for long.

Why You’ll Love These Frozen Banana Bites

  • No baking required – Just mix, chill, and roll. Perfect for quick snacks or warm-weather days.
  • Naturally sweetened – Ripe banana and a touch of honey give these bites their irresistible flavor without refined sugar.
  • Kid-friendly – Easy enough for little hands to help with, making it a fun kitchen activity for toddlers and older kids.
  • Great for on-the-go – Pack them in lunchboxes, take them to the park, or grab a few before heading out the door.
  • Customizable – Swap in different nut butters, add protein powder, or mix in extra goodies like coconut or seeds.
  • Freezer-friendly – Make a big batch and stash extras in the freezer for a ready-to-go snack anytime.

Ingredients

  • Bananas
  • Peanut butter (or almond butter)
  • Chocolate chips (we use a soy-free brand)
  • Coconut oil

Instructions

First, you’ll need to slice your bananas. Your little helpers can help you cut the bananas into pieces… (don’t let them use a sharp knife, like I show in this photo for obvious reasons!)

Next, lay the bananas on a parchment-paper-lined cookie sheet. You’ll need two banana slices for each “Chunky Monkey bite” – this is a great time to encourage counting by twos or even multiplication with your kids!

Spread a little peanut butter onto every second banana slice. To make it even easier, spoon some peanut butter into a sandwich baggie and cut a little bit off the corner.

Now you (or your helpers) can simply squeeze the peanut butter out. This is much quicker, simpler, and less messy than using a knife.

Top each dollop of peanut butter with a banana slice, making a little “sandwich.” Even little helpers will love to help with this part!

Now you can stop here and enjoy a simple peanut butter and banana snack. Or tell your kids you’re making frozen chocolate banana bites and wait just a bit longer!

This next step is important: freeze the banana sandwiches for at least 30 minutes, preferably an hour. This will allow the chocolate to stick to the bananas versus sliding off, like it will if your bananas were room temperature.

When the bananas are almost ready to use, melt the chocolate with just a little bit of coconut oil, about one teaspoon. This helps thin the chocolate a little, making it easier to use.

When your bananas are ready, use a fork to dip each piece into the chocolate. You should probably do the chocolate dipping, though your little helpers will be happy to help you lick out the chocolate bowl when you’re done!

Return to the parchment paper sheet.

Freeze again for another hour or so until the bananas are hardened.

By the way, you will need to keep your Chunky Monkey bites cold, or the banana will try to separate from the chocolate, making a bit of a mess. They’ll still taste good, but they won’t look as nice.

Tips for Success

  • Use ripe but firm bananas – You want bananas that are sweet but not mushy, so they hold their shape when sliced.
  • Slice evenly – Try to keep banana slices uniform so the bites freeze and sandwich neatly.
  • Don’t overfill with peanut butter – A thin layer is perfect—too much and it’ll squish out the sides when you press the slices together.
  • Freeze before dipping – Pop the banana sandwiches in the freezer for at least 1 hour before dipping to make the chocolate coating smoother and less messy.
  • Work quickly when dipping – The colder the banana bites, the faster the chocolate sets. Line a tray with parchment paper to prevent sticking.
  • Store properly – Keep the finished bites in an airtight container in the freezer. Let them sit at room temperature for 1–2 minutes before eating for the best texture. Then, eat them quick – no problem for us with that part!

So, there you have it – our famous chunky monkey bites. I know your family will love it just as much as mine does!

Ingredients

  • 2 bananas
  • 1/3 cup peanut butter
  • 1 pkg (10-12 oz) chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Slice the bananas into medium-sized pieces and place on a parchment paper-covered baking sheet.
  2. Add a small amount of peanut butter to every other banana piece, then sandwich together.
  3. Freeze for at least 30 minutes.
  4. In the meantime, melt the chocolate chips with the coconut oil.
  5. When the bananas are chilled, dip each banana “bite” into the chocolate.
  6. Return to the parchment paper and chill again until the bites are solid.
  7. Keep in the refrigerator.

      The frozen banana/peanut butter sandwiches began to melt as I was dipping them and got so mushy that they fell apart. And some of the melted water got into the chocolate sauce and messed up the smooth consistency. Any advice as to what I did wrong?
