Overnight Oats are one of the best things since sliced bread, in my opinion. They’re quick and easy, you can make them into your favorite version, and easily make it your own by adding or removing any ingredients you may want.
For example, if you’re not a fan of nuts, you can leave them out without affecting the recipe or add even more if you really love them.
You can also make these overnights oats with almond milk or your favorite dairy-free milk. Or if you’re not vegan or dairy-free, use regular milk; your choice!
I love overnight oats and my kids do too. In fact, my kids love to make their own creations and it was my son, Joshua, who suggested we make pumpkin overnight oats. Of course, you can’t really have pumpkin without pumpkin spice, so we added that too.
If you’re new to overnight oats, it may seem odd to not cook your oats, but they are delicious to eat the next day as the liquid softens the oats and the flavors blend together.
Simple Overnight Oats in a Mason Jar

Put the oats into a small mason jar…
Add the remaining ingredients, except for the nuts.
Stir to combine.
If you’re using nuts, sprinkle them on top. Your oats mixture will look a little thin right now, that’s okay; it will thicken up overnight.
Cover and refrigerate overnight.
Add a touch more of maple syrup if you want a little more sweetener.

Ingredients
- ½ cup almond milk
- ½ cup oats
- ¼ cup pumpkin puree
