If you love all things pumpkin spice, you’re going to love this healthy pumpkin pie overnight oats recipe. It’s the perfect make-ahead, nutritious breakfast with thick and creamy pumpkin oats, pumpkin spices, optional nuts, plus maple syrup as a natural sweetener.

Did I mention you can whip up this overnight oats mason jar breakfast in under 5 minutes? Yes, it’s simple and easy too!

This breakfast is dairy-free too, meaning it’s a vegan overnight oats recipe too. And it’s gluten-free if you use gluten-free oats.

I love recipes that are naturally diet-restriction friendly, don’t you?

Pumpkin Overnight Oats Recipe

Overnight Oats are one of the best things since sliced bread, in my opinion. They’re quick and easy, you can make them into your favorite version, and easily make it your own by adding or removing any ingredients you may want.

For example, if you’re not a fan of nuts, you can leave them out without affecting the recipe or add even more if you really love them.

You can also make these overnights oats with almond milk or your favorite dairy-free milk. Or if you’re not vegan or dairy-free, use regular milk; your choice!

I love overnight oats and my kids do too. In fact, my kids love to make their own creations and it was my son, Joshua, who suggested we make pumpkin overnight oats. Of course, you can’t really have pumpkin without pumpkin spice, so we added that too.

If you’re new to overnight oats, it may seem odd to not cook your oats, but they are delicious to eat the next day as the liquid softens the oats and the flavors blend together.

Simple Overnight Oats in a Mason Jar

One of the reasons I think you’ll love this particular overnight oats recipe is that it’s super simple and fast to prepare.

You don’t need a slow cooker, all you need is a mason jar, spoon, and the simple ingredients.

Add the ingredients, stir to combine, then cover and refrigerate your easy pumpkin pie overnight oats. Your healthy pumpkin overnight oats will be ready and waiting for you the next morning.

How long do overnight oats last?

Your overnight oats should last 5-7 days when kept cold in the refrigerator. This means you can make several at one time for easy breakfast meal prep and enjoy your delicious pumpkin pie overnight oats throughout the week!

Pumpkin Overnight Oats Recipe

Ingredients you’ll need: almond milk (or your milk of choice), oats (use gluten-free if needed), pumpkin puree, pumpkin spices (cinnamon, ginger, nutmeg, cloves, allspice), vanilla extract, maple syrup, and (optional) chopped walnuts or pecans.

Optional Add-ins:

You may also want to add some extra add-ins for nutritional value. For example, a scoop of protein powder (this one is my favorite) will help you stay full even longer.

This mushroom powder is tasteless when mixed into beverages and food, like this easy overnight oats recipe, and with 10 medicinal mushrooms, it has some pretty amazing benefits. I find it helps me stay focused and more productive at work and my immune system seems stronger.

Collagen is another superfood that’s easy to mix in.

Back to our instructions…

Put the oats into a small mason jar…

Add the remaining ingredients, except for the nuts.

Stir to combine.

If you’re using nuts, sprinkle them on top. Your oats mixture will look a little thin right now, that’s okay; it will thicken up overnight.

Cover and refrigerate overnight.

Add a touch more of maple syrup if you want a little more sweetener.

Serve and enjoy your delicious pumpkin pie overnight oats breakfast!

Ingredients

Scale
  • ½ cup almond milk
  • ½ cup oats
  • ¼ cup pumpkin puree
  • ½ tsp cinnamon
  • 1/4 tsp nutmeg
  • ⅛ tsp ginger
  • ⅛ tsp cloves
  • pinch allspice
  • ¼ tsp vanilla extract
  • 2–3 tsp maple syrup
  • 1 Tbsp chopped walnuts or pecans, optional

Instructions

Put all the ingredients except the nuts into a small mason jar and stir to combine. Place the nuts on top if desired. Cover and refrigerate overnight.

Serve and enjoy the next morning! You may want to add another drizzle of maple syrup if desired, depending on how sweet you prefer.
