Recently, I had two cans of salmon just sitting there in my pantry. I wanted to make something different than the typical salmon patties, so I found a recipe for salmon quesadillas. I tried it out on a busy day when I almost forgot about dinner. It was fantastic.
The flavor combination works surprisingly well and comes together in under 10 minutes. This is the perfection option for a last-minute dinner!
I have to admit… I was a skeptic until I gave it a try myself. Even my kids gobble these quesadillas up and ask for seconds—and I have a few picky eaters in my midst. 😉
Ingredients
This 10-minute salmon quesadilla recipe is so easy to make it is going into my select-always-keep-ingredients-on-hand meal list for those days when I’m too busy to make a regular dinner.
Whipping up this healthy dinner is simple! Here’s what you’ll need to have on hand:
- Minced garlic
- Canola oil
- Canned salmon – make sure to drain and ensure the bones & skin are removed
- Dried basil
- Black pepper
- Butter – it’ll need to be softened. Here’s my easy hack for softening butter quick!
- Flour tortillas (8 inches)
- Shredded mozzarella cheese
- Guacamole or salsa
Instructions
Making these quesadillas is so easy! First, grab a skillet and use it to saute the garlic in oil until it’s fragrant. Then, add in the drained canned salmon, basil, and pepper. Stir and cook until it’s heated through.
Meanwhile, grab your tortillas and butter one side of one of them. The butter is the secret to getting that yummy, slightly crisp golden exterior!
Place the tortilla butter side down on a skillet or griddle. Sprinkle some cheese on half of the tortilla, then spoon some of the salmon mixture on top. Layer some more cheese on top of the salmon, then fold the tortilla shut.
Cook the salmon quesadilla over medium heat for 1-2 minutes per side until the cheese is melted and the exterior is golden brown. Serve warm and enjoy!

I like to serve this salmon quesadilla with all our favorite toppings and dips. For us, that includes:
- Salsa
- Guacamole
- Sour cream
- Salsa verde
Since I make this as a quick, no-fuss dinner, I keep the overall meal pretty simple. I will sometimes set out a veggie tray or rainbow fruit salad or make a simple side salad like this strawberry spinach one.
